Black Summer Truffle (Tuber Aestivum Vitt)
It is the most common truffle in the Italian culinary tradition. Its black peridium (the outside area of the truffle) has a very warty bark, which makes it more resistant and long-lasting than other species of truffle. The pulp has a hazelnut colour with thick white veins. The aroma and the taste are quite delicate and more subtle than other truffles.
Harvest period: from the 1st of May to the 15th of September
Use: suitable for any dish, preferably sliced if used raw and grated when cooked. It is mostly used in the preparation of jellies, stuffed pasta, meat rolls and sauces. For a simple yet gourmet truffled snack, simply slice it on some fresh bread, with the addition of extra virgin olive oil and a pinch of salt.
