The most important amongst the black truffles, also known as black truffle of Norcia or French Pèrigord truffle. Its scent and sweetish taste distinguish it from other Black Truffles.

Summer truffle (Tuber aestivum) has a delicate, mild aroma compared to black winter truffles, with notes of nuts, earth, and fresh mushrooms. On the palate, it is subtle and slightly sweet, with hazelnut-like nuances and a gentle earthy finish.
