The white truffle (Tuber magnatum Pico) is the rarest and most prestigious, available only for a few months a year. Its scent is complex, with notes of honey, garlic, and wild musk. On the other hand, the black truffle varieties, like the Winter Black and the Summer Scorzone, offer a more robust and earthy profile, perfect for those who love to experiment with different cooking techniques.

Understanding the Value of Fresh Truffles

When you buy fresh truffles, timing is everything. A truffle is at its peak the moment it is unearthed by the truffle dog. From that point on, it slowly begins to lose its moisture and aroma. That is why we manage our logistics with extreme care, ensuring that the truffle price you pay reflects a product that is as close to the harvest as possible. 

Types of Truffles

  • White Truffle (Tuber magnatum Pico): The rarest and most prestigious variety, harvested from September to December. It features a powerful, complex aroma of honey and garlic. Best served raw in thin shavings.
  • Black Winter Truffle (Tuber melanosporum): Known as the "Black Diamond," this winter treasure has deep, earthy notes of chocolate and musk. It is highly versatile and releases its full flavor when gently warmed.
  • Black Summer Truffle (Tuber aestivum): Also called Scorzone, this milder variety is found during the warmer months. It offers a delicate, nutty flavor that pairs perfectly with light pastas and salads.
  • Bianchetto Truffle (Tuber borchii): Harvested in late winter, it looks similar to the white truffle but has a much sharper, more intense garlicky scent.

How do I store my fresh truffle? 

Wrap it in a clean paper towel, place it in a glass jar, and keep it in the refrigerator. Change the paper towel daily to prevent moisture buildup.
